Varieties

For genuine eating pleasure, no fruit can equal the apple, our national fruit. In the apple, nature has achieved a masterpiece, beauty of form and colour, appetizing aroma, crisp, juicy texture and delicate flavour. Ontario's climate is well suited to the growing of apples. The following are the main varieties grown by us - some old favorites, some new:

McIntosh
This truly Ontario variety originated in Eastern Ontario nearly 200 years ago, and has since spread all over North America and other parts of the world. A medium sized apple. Red in colour, with green background. The flesh is white. It's juicy, crisp, becoming mild and nearly sweet when ripe, very aromatic, a delightful flavour. Excellent for eating fresh, can also be cooked in pies, or made into sauce. Available from September through to May from storage.

Red Delicious
There is no mistaking the Red Delicious apple, with its exclusive tapered shape, with five distinct knobs on the bottom of the apple. Red Delicious can be dark red, brilliant red or sometimes light red with bold stripes and tinges of yellow. The flesh is creamy white and fine grained. Its sweet, crisp and juicy, with mild aroma. It is an excellent eating apple and should not be used for cooking. Available from October through to late Spring.

Empire
A relative newcomer, a cross of the McIntosh and Red Delicious which gives it a unique flavour. This apple is medium sized. Colour is predominantly dark red, striped and blushed, contrasting with light yellow background. Flesh is juicy, cream coloured, mild in flavour and sweet. It is a high quality dessert type for fresh eating and also cooks well. Available from early October until early summer.

Northern Spy
Ontario grows a premium "Northern Spy" apple, and this is the apple for pies. This apple is large and red striped, with flesh that is yellowish and rather firm. Very juicy and tart. It is excellent for eating fresh, but is supreme for cooking. Available from October through to the Spring months.

Idared
A late season variety, a cross of the Jonathon and Wagener varieties. A medium to large apple, uniform in shape and solid bright red. Flesh is firm and white, somewhat acid. A late keeping apple, good for eating and cooking. Tart at picking time, but mellowing with storage. This apple tastes best after Christmas.

Cortland
A cross between the McIntosh and Ben Davis varieties, it is a medium to large apple, somewhat flat oval in shape. It is bright red, with a green/yellow cheek. The flesh is snow white and quite firm. It is mildly tart and delicate in texture, when cut it retains its white colour longer than any other variety, making it especially good for salads and fruit cups. Good for eating and a good baking apple for apple pies and sauces.

Spartan
A medium sized red variety produced by crossing McIntosh with Newton, with a sweet distinctive flavour. Crisp white flesh and unusual small core. A good eating and cooking apple. Available October through early summer.

Golden Delicious
A yellow apple, sometimes greenish yellow, generally medium to large in size. The flesh has a yellowish tinge, fine grained and mildly aromatic, crisp and tender, tastes sweet and juicy. An all purpose apple, good for eating and cooking. Available October through early September.

Crispin / Mutsu
A cross between the Golden Delicious and the lndo varieties. The name tells its Japanese origin. This is a large apple, which can be green or yellow at maturity, sometimes with an orange blush. The flesh is firm, very dense in texture and juicy. Excellent for eating fresh and for baking. Available from late October through April.

Russett
An old acquaintance that has won a renewal of interest. The Golden Russett is a medium to small apple, golden brown, with a rusty skin. The flesh is firm, yellowish, fine grained and aromatic. This apple is excellent for eating fresh. Available from November through April.

Gala
A cross of Kidd's Orange x Golden Delicious introduced from New Zealand. Gala is a promising new apple which matures in September. Fruit size is medium and of excellent quality. Gala has rated very well in a number of taste panels. It is a striped red apple that frequently shows a complex red surface having white flecks muted by a hazy, waxy appearance, yet is very attractive. Available McIntosh season or earlier.

Jonagold
Jonagold originated from Geneva, N.Y. as a Golden Delicious x Jonathon cross. It is very popular in Europe and is now gaining importance in North America because of its high quality and flavour. Jonagold has a large fruit size and opens with Golden Delicious. Jonagold certainly has a place for direct producer-to-consumer sales. Colour is an attractive orangish-red blush with a slight hint of a stripe over a beautiful yellow ground colour. Excellent for fresh use and cooking.
